Il sudachi è un agrume relativamente vicino allo yuzu e viene coltivato soprattutto nella prefettura di Tokushima. Il frutto è piccolo, intorno ai 30 grammi, difficilmente sbucciabile. Il succo si usa spesso al posto dell’aceto, infatti il suo nome è composto da “su”, aceto, e “tachibana” (altra varietà di agrume).
Ha un gusto rinfrescante dovuto al succo acidulo con un aroma pungente. Si può accompagnare con erbe e spezie come basilico, pepe, cardamomo e cumino.
In autunno, si può trovare in vendita nella stagione dei funghi “matsutake”.
